Apricot kernel is actually the “almond” in the apricot kernel drink that is familiar to the Chinese people with its unique aromatic flavor, whereas almond which is widely produced in America is a type of “flat peach kernel” also known by the species “Badam,” with a nickname of “US Almond.” In the ‘70s, businessmen imported almonds from America to the East and it has been mistaken for “apricot kernel” until the present due to their similar looks. Stores in Taiwan nowadays will still show the label of “almond” whether for the real apricot kernel or the flat peach kernel; however, the market in China has already begun to request manufacturers to clearly label the difference between the two. As for the international market, one can identify them via the English names, especially when the name is the main ingredient.

Therefore, the snack we eat is the nut peach kernel, known as Almond. While the traditional dessert of Chinese almond tofu is known as Apricot kernel, this must be especially noted when purchasing the raw materials.
